Last week, I made some pulled pork smoked over hickory and cherry wood. This week, I'm going to smoke some ribs, a tri tip, and some fish (probably some trout). I love smoking and barbecuing, it's kind of addictive (the process, not just the food itself).

I actually like smoking foods. Planning cooking times, meat cut choice, smoking wood choice, building and tending the fire. I enjoy that all more than the actual barbecue food.

I generally like to coat my pork ribs in yellow mustard sauce. Cover them in aluminum foil.
Then I'll bake them for 4 hours at 300degrees.
After that the mustard will have melted away.
I then very carefully bring them to the grill and let them gather that smokey goodness.
After that I drown them in the family BBQ sauce and let the sauce caramelize.
Gotta be vuuury careful removing them, the mustard acts as a tenderiser and literally bones go through the meat

General Tip:
Oak is great for maintaining heat and keeping costs down when you smoke at home. One cord goes for about $150 and will get you set for the year. Buy premium woods like cherry, pecan, and apple in chunks and throw them on during the final hour or two of smoking.

I've used them before. (Well, on a charcoal grill, but basically the same thing.)

They work ok, particularly for smaller quantities. If you're just cooking for you and a friend, it'll be fine. If you want to smoke several briskets, you'll be disappointed.

I've bought a few of them before. Some nearly fully enclosed, some openly slotted, and one that can lay across underneath the cooking grates. Just make sure to soak the wood really good. I would just have you get it going on as you preheat the grill. Otherwise it is just not smoking your food for flavor.
