If you had ten pounds of beef bones what would you do with them /ck? I am thinking of making stock and using that for french onion soup.

Exactly that. Stock then use the stock for some kind of soup or freeze it and save for use later.

Should I roast the bones before making the stock or keep them unroasted? I have heard of both but I would rather have a stronger flavored stock than a clear one.

Definitely roast.

Put each one up your butt for a few days to let them ferment. It breaks down the proteins in the marrow.

Well I shall do this tomorrow and post results. My mother actually came to my apartment last night and gave them to me. She said she got them for $3.50 from a meatlocker out in the country, in the town where I live it is $4.99 per pound. $3.50 for ten pounds is a really good price.

Make the stock then slice like 2 whole heads of garlic a ton of onion just a little green pepper, black pepper, thyme, good salt, and grab a roast and shave it then let it cook in your homemade garlicky au jus and throw it on fresh crunchy french bread.

Make beef stock out of them.

And afterwards, cut open the bones and eat the bone marrow. SO delicious.

Toss some in the slow cooker along with some veggies.

If the marrow is left you didn't make the stock right.

These folk are right about the marrow, break them bones them bones then eat the marrow for the win.

When I was a little kid I used to break chicken and beef bones to get at the marrow, folk thought I was weird, which I at least admit that I am.

Be careful though, you don't want to ingest a bone shard, they're sharp and can pierce your throat or worse.

I never heard anything similar to roasting bones before cooking them in stock.

beef for beef stew would be nice. you turn the onion soup into gravy and use the gravy as the cooking liquid.
