I found one of these disc-type sharpeners in one of my kitchen drawers. I thought it would be junk, but I tried it anyway just for the hell of it. I was shocked the thing actually worked, got my knives sharp enough to shave hair off my arm. I still prefer my stones, but these little things work great. I'd recommend one of these.

I have the Lansky version of the carbide/ceramic pull-through sharpener. While it seems to be capable of a similar level of sharpness, I haven't had entirely consistent results with it, and I haven't been able to sharpen the knife tip effectively.

Just buy dozens of cheap knives, then whenever one gets dull throw it away.

these things work pretty good for a pocket knife but there are two things you should know.

1. If you are a limp wrist you will slice your finger with it.

2. It devours the steel from a knife as quickly as nogs are devouring sweden.

Deluxe 5-Stone System:
-Extra Coarse Black Hone (70 grit) for re-profiling the bevel grind
-Coarse Red Hone (120 grit) for edge reconditioning
-Medium Green Hone (280 grit) for sharpening and less frequent touch-ups
-Fine Blue Hone (600 grit) for most frequent touch-ups to keep your blade paper-slicing sharp
-Ultra-Fine Ceramic Yellow Hone (1000 grit) for polishing the edge for a razor sharp edge

so about 2k JIS

convenience sharpeners tend not to work because they don't edge the knife correctly.
Stuff that maintains an edge for you is still going to take a ton of time. If you only plan on sharpening kitchen knives get some high grit sand paper-800 to 2000ish- and tape it to a piece of granite. Make a 90 degree angle with the knife and the surface then half it then half it again and sharpen the knife at that angle alternating sides for 5 to 90 minutes depending on how bad you let the edge get. Drag the knife edge through a piece of wood or something similar. Then sharpen the knife on some newspaper or phonebook paper for about 3 minutes.

The quality of those varies from perfectly serviceable to complete garbage that will ruin your knives, and there's no way to know without buying it and trying it out.

See, that's not once, that's hundreds of times. Do you have a source on that? Was that really from a pull-through carbide sharpener, and not the powered kind with abrasive wheels?
And besides, OP did not ask about general-purpose sharpening, he asked about convenience sharpeners. You can pick up a double sided SiC stone from Winco for less than the disk sharpener I posted. That would be perfectly adequate to keep your knives from developing recurve.

>>5724922
Are you sure you're not thinking of the kind with abrasive wheels? I don't really see how you could mess up a stack of steel washers. But then the only one I've tried is an Ekco from the seventies.

I've worked since 1994 in various capacities of campaigns and public policy. I've been either a staffer or a contractor for the presidential campaigns of Dole, W and Romney. I've worked for governors, senators, congressmen, state legislators, city and county officials. I've worked on everything from statewide initiatives down to getting a precinct to approve a gas station.

I've also worked in DC for a lot of special interest organizations.

Anyway, I'm happy to do questions for the next hour or two.

None. Convenience knife sharpeners destroy knives. If you even think this is an option, I hate the very essence of your being.

>>5723211
These are the only exception. Except they aren't a gimmicky convenience tool because you actually need, in some way, to know what you're doing. And if you buy one at retail price, you are an idiot. Any engineer -- literally any actual engineer, and I don't mean dumbass engineering students -- with access to tools can make one of these for you at a fraction of the cost. They are not magic. They are, however, incredibly useful. Just don't pay too much for one.

For simple advice, sure. To formally represent me? No. You wouldn't ask an engineer to design you a car for free but a simple project like helping you make a knife sharpener is a different thing altogether.
