What are your favorite dishes? As someone who is neither vegetarian or vegan, but is concerned about the environment, the biggest obstacle for my transition to veganism is the seeming lack of good food. How do you live without delicious meat?

in the past, large herds of wild animals would trample tall grass flat and cover the soil, protecting it from the sun.
now desertification is rampant, and "protected" areas where wildlife was moved or killed to prevent its spread has only exacerbated the issue.

herds of large animals no longer exist in sufficient quantities to trample enough grass, farmed animals are the only solution.

Black beans (prepared with tomato, chili powder, lime, onion, sweet corn, etc), homemade bread, soups with barley and lentils and split peas, whole wheat pasta either eaten with just herbs or with tomato and chopped olives, oatmeal, any kind of fruit, steamed or roasted greens (brussel sprouts, broccoli, spinach, asparagus), baked sweet potatoes, chickpea tacos in corn tortillas, and as treats I have stuff like dates filled with puree'd walnuts or a banana speckled with crushed pecans and salted sesame seed powder

I take a more healthful approach, but if you're not as interested in health, you can of course add oil and sugar and whatnot wherever you want. I think most people are familiar with enough foods that are vegan or that can be easily made vegan, you just aren't used to thinking of them as "vegan food." A simple peanut butter and jelly sandwich for example, is vegan.

Enjoy your malnourishment. If you want to get all your necessary nutrients on a vegan diet you're going to be relying on a lot of varied and exotic foods.
If you live somewhere tropical you can probably do it, but for temperate regions you're shit out of luck unless you want to live on potatoes or something.

My diet consists of a lot of bean burritos, a lot of smoothies (which contain everything from fruit to beans to greens), pasta and vegetable dishes, curry, salad, greens, oatmeal, fried tempeh, scrambled tofu, potatoes, sweet potatoes, stir fries (pasta and veg, beans and veg, veg on rice), noodle soups.

Today I kind of pigged out because I went to vegfest in Bethlehem, had a bunch of doughnuts and pizza and hotdogs.

I focus more on eating healthy and high calorie now though. I used to eat a lot of soups. Soups are great, but not as calorie dense

I'm not vegan because veganism is for dumbasses. Falafel happens to be vegan, though, and it is DELICIOUS.

It's best when you make it by crushing whole chickpeas yourself, and always fry it. Baked falafel never comes out as good.

Their point is that the good flavors are still coming from plant matter. The stipulation that cooking the meat at all means that you don't like the taste of meat is kind of silly, though. Seared meat has a singular taste that can't be accurately replicated, with or without seasoning. There are plenty of raw meats that taste great as it is.

Eating meat doesn't have to destroy the environment. We could in theory, do more conservation.

It isn't as black and white as "people cut trees to farm cows"

We could just raise fewer cows and have more farm raised fish. You can raise a lot of fish in the space one cow needs.

Part time vegan here, as in I cook vegan at home, but when I go out all bets are off. (Works to keep my middle ages ass trim and off cholesterol meds). Some of my favorite dishes to cook and eat at home are:

sesame rice noodles with cucumber and chopped peanuts
ratatouille
Andalusian chickpeas and spinach
rajma
Black eyed peas and Swiss chard in olive oil, garlic and lemon
simple pasta pomodoro with garlic and fresh basil
red lentil soup
guacamole
chana masala
caponata
