I've been trying out southwestern food lately but everything tastes like it is missing something, does anyone know how I can give my food that southwestern kick?

I find a lot of Mexican and Tex-mex recipes benefit from salt and umami... more garlic, more onion, more tomato, maybe some broth, and if that doesn't do it, add salt.

If it needs more depth of flavour, try different chillies (especially in recipes asking for paprika - there are so many types of pepper powder you could use), (more) cumin or coriander, more oregano, or a different type of oregano... clove, cinnamon, cocoa, nuts... there are a bunch of things you could add or substitute and chances are that none of them are really "wrong" unless the flavour takes a left turn.
