I make stock from fresh pig's feet then start the initial frying part from chopped, smoked bacon as well as some thinly-sliced onion and crushed tomato, caramelising (yes: I wrote it with an S cuz no: I am not from America) the veg until nicely coloured.
Finally, I build the stew no top of this inital fry from pig's feet stock, pork shoulder cut into cubes, smoked ham hocks, dry lima/butter beans, dry whole hominy and russet potatoes, adding carrots, pearl onion and yellow potato towards the end so that they don't overcook then add salt and pepper to taste. Also laurels/bay leaves. It does not simmer; it boils until the potatoes have broken down and turned the whole thing thick, then I add water and the carrot, pearl onion and yellow potato and simmer until they're cooked through.
Dunno if this is correct as I've never actually had a Brunswick stew that I didn't make and I've never looked up a recipe, but this is how I figured I'd make it and it's really quite good this way.
