Korean pickled cucumber.

Easy as hell. Cut up cucumber. Mix in ingredients for liquid, might need to go to the asian store for fish sauce (not fishy at all) and rice vinegar.

I didn't have the chilis so i just used a bunch of costco chili flakes u get with pizza.

Let sit overnight.

Eat.

Seems like lots of Lao things are both piquant and cold.

Also, where my parents have their summer house, chili-and-gianduja (gianduja is hazlenut-chocolate, the most famous brand of which is Nutella) ice cream is pretty popular. The first time I had it in 1999 or 1998, I didn't think much of it but it existed.
