I actually enjoy a grilled havarti or emmental on sourdough. I like to lightly coat the outside of the sandwich with mayo and a little romano. When you grill it in the pan, it forms a nice crust. Sometimes I like to actually grill it on my BBQ grill. I give it a good toast over direct heat, then let it get a little smokey on indirect heat.

I agree. But that wasn't the question. The question was whether or not FDA certification had anything to do with cancer risk, not a discussion about the magnitude of that risk. You appear to be moving the goalposts and/or changing the argument. At first it was "it's not cancer". Now it's "oh, well it IS cancer, but the risk is low".
