No its not. Honest to god. I started doing it about a year ago because i was out of lime at the time. Bstm fucking "mistake" i ever made. It tastes sooo much better/brighter. Lime is just weighing down a lot of guacamoles and stopping them from being all they could be.

I just crush up some avacado, add a little bit of onion(like a tiny bit) and tomato, a bit of cumin, black pepper, and some lemon juice. Its simple, and its the best.

Unfortunately OP., that's not guacamole in the picture, that's more of a tomato salad (picadillo) with macerated avocados. Guacamole as the name implies (Guaca= avocados [testicles in Nahuatl from āhuacatl] + mole = sauce [from molli in Nahuatl]) is a sauce like any other mole, the thing giving it the thickness being the avocado as opposed to roasted peanuts, sesame seeds or pumpkin seeds and many other seeds. Therefore the recipe for guacamole is like the ones some Anons have already posted:

Avocado
Onion (white or red/purple)
Garlic
Cilantro
Chile (either Jalapeño or Serrano)
Salt
Lime (optional)

I don't have the ratios at the moment, but you will need a lot of cilantro. You put them all in the blender until it becomes a thick rich sauce similar in consistency to crème fraîche. I have seen the macerated avocado dip (avocado, onions, garlic macerated together then chopped cilantro in it sometimes) but not made in a molcajete, like in your picture. You don't make avocados in a molcajete that would just be a big mess, unecessary and a bitch to clean up, no self-respecting person serves it like that it's stupid. So what's in your picture is not technically a mole. The stuff Americans call "Guac" or guacamole isn't a guacamole, it's a tomato salad with chopped/macerated avocados and that's the one in your picture, in which the onion and tomatoes and cilantro are chopped and mixed in with the squished avocados. Sorry if I was redundant is just that whenever I see threads like these, people get into arguments especially with the tomato thing. They however never bother to define exactly what they're talking about; be it the sauce, salad, dip or salsa.

Also please stop calling it "guac" that's such an ugly word and it sounds Asian like if one is saying "wok." I have yet to figure out what "guac" means, it sounds like something a hipster from chipotle restaurant made up.

Yes a blender is necessary to give it that creamy consitency. There are some that prefer it a bit thicker but it depends on your application. For the most part the guacamole is used like a cream sauce hence the name "mole" I emphasized. The most common dish it is used for is probably flautas, you can look up images of "flautas con guacamole" and you will see what I mean. For other applications for example tacos de carne asada the sauce would be too runny so it's usually mixed with macerated avocados to make it a bit thicker, more like a paste. But it depends on the particular person's preference to the texture they want. Like in the following pictures:

I posted this in the last guacamole thread, but I'll post it again. Simple is best when it comes to guacamole. This is how I make it, which is how they made it in Mexico when we used to vacation there years ago.

Other than the serrano, it needs no other vegetables added. 2 key limes is the perfect amount of lime juice for 4 large avocados, obviously you would adjust the amount based on the size and number of avocados you have. Perhaps you are thinking of persian limes, not key limes.

>toss all the ingredients together in a bowl with a thick, sweet bbq sauce, add more chili powder and some chopped cilantro
