So I'm starting culinary school and I'll be assembling a knife set on my own as opposed to just buying the set they offer

What knives can I go cheap on and which ones should I spend extra on? I know the Chef Knife is the most essential and the Bread Knife can be $10 walmart trash but I'm not sure on the rest.

paring/vegetable knives get thrown around/out a lot, so have a few cheap ones. turning knife you'll rarely use but they'll prob get to you to use one during your course. get good filleting and boning knives (I've heard cheap ones can snap). most professionals also get diamond top honing steels if you have the money, otherwise just get a regular steel to look after your knives.

Just get the knife set they offer. And once you know what kind of knife you like, buy another knife for keeps. If you're in culinary, they'll make sure you learn how to use every knife in the kit... However, knife usage depends on what kind of course you are in... but the chef knife/ paring knife are used the most often.... Unless you're doing pastry also, then you'll also need to get a nice bread knife and scoring knife/lame.

I also suggest getting a good peeler and microplane zester.

Victornox is cheap but holds a really impressive edge even though they're only stamped steel. Best edge for the money. I like them better than the Wusthof and Henkels that I've used. Before getting my Victornox, Wusthof were my favorites.
