Anyway here's my poorfag recipe:

Shitty half Crock Pot "Gumbo".

As you know, gumbo has a variety of meats and seafood, but this is poorfag thread, so mine has only chicken and pork. Yum.

Spices:
-Cayenne Pepper
-Dried "Chile de arbol" (Can't be assed to remember what it's called in english).
-Salt
-Pepper
-Garlic Salt.
-Bay leaves

First thing I do is take a chicken leg, defrost it, and cut off all the meat, leaving only bones and skin. I use the bones and skin to make the stock, adding bayleaves to taste. Leave this while I prepare the rest.

Now, what makes a shitty gumbo a shitty gumbo is a shitty roux. I'm new to gumbo, but I find that adding more flour than oil makes a thicker roux, which I like. I use brown roux for that smoky smell and flavor. Once it's done, set it and let it get to room temp.

By now, the broth must be positively boiling, so I fish out the bones and skin and add some of the pork (these are square pork cuts with bone for that extra broth brothitty brothbrothbroth).

Now, I sear the chicken meat, with some onions. Put it aside for now.

While the roux is cooling and the broth is brothing, I mince some garlic, and some cambray onions because that's litterally all I have in my kitchen.

Now that the broth smells of pork, and is boiling, I move it to my Crock Pot, which has been "pre heated". While it's still boiling I add my room-temp roux and mix it well. According to the fat chefs on youtube, the difference in temperature helps with the thickening. I have messed up and added them while they were both piping hot and had difficulty incorporating them, so I know this to be true.

Once the roux is incorporated into the broth I add the rest of the pork, and the seared chicken and onion into the pot.

Then i add, Cayenne, Chile de arbol making sure to break it so the seeds scatter and it gats assblastingly spicy, salt n' peppa, my minced garlic and some garlic salt because fuck you.

As for the minced cambray onions... I add them when it's almost done, or just serve them raw on the bowl. With some white rice.


This recipe must sound like complete dogshit to you, but it's made some tasty meals. Hope to get some tips.

Possibly not true. The only vitamin that experiences deterioration upon cooking, so far as I know, is C. Boiling or stewing vegetables actually /increases/ the bioavailability of many, many vitamins and minerals. For example, carrot.

Yeah, I prefer making homemade food as a poorfagasaurus as well. I'll usually get bone on split chicken breasts (cheaper than thighs at my store) along with some potatoes, carrots, celery, onions, garlic, and spinach. My grocery store is pretty cheap thankfully and all of this stuff lasts me a while.
I'll cut the breast mostly off of the bone and bake them. I'll serve with rice (got a huge bag for free from the mem). Then I'll boil the bones and excess meat with vegetables and make chicken soup (pull meat off of bones) which lasts me for a long while. Left over spinach and onions can go in eggs in the morning, carrots I'll eat as a snack. Potatoes, garlic, and onions are versatile.

But yeah, I re-use frying oil until it's a bit dark then use it almost exclusively for roux or baking. And bacon render is always good to save.
