I like having every color of lentils mixed together + alot of garlic and onions and pepper. maybe a pinch of cinnamon and a drop of rice vinegar to make secret changes in it so it comes out even better.

I also add alot of salt in the beginning and cook it hot for very long so it isn't so salty at the end but the flavor is more deep. i refuse to go to the store and buy containers of MSG when I can make things my own way and better.

mix partially with grains (like quinoa or rice)

use the flavours you'd use in a split pea soup (celery, carrot, onion, bay leaf, whatever else -- even something like a bit of linguica or kielbasa or chorizo or bacon for flavour))

don't cook until mush - let it retain some definition

eat hot or cold -- keep as a staple in your fridge for a week or so

I like green lentils simmered for 20min in unsalted water, then blanched. I mince a clove or two of garlic, thinly slice a bundle of scallions, and toss together with olive oil and sherry vinegar. Makes a nice cold dish with a delicious tang.
