Actually I don't care for veal that much.I find the texture a bit to soft and the taste too mild or neutral. Even in meatballs or patties. a waste of space and money. I'd much rather use lamb. I started this out as shit post to irritate the petafags, but that really does not work and I apologize.I do have a quesstion for ck.i just put two thick 12 oz pork chops in the oven. (brined with adolfs, sugar and dill).Donn't usuallly buy chops that large, but they were cheap (hence the "adolphs" papin.My question is and true, not just to irritate)does "frenching" the bone like op's pic serve any real purpose or just presentation? I did not "french" the chops. (they were pork, like two mini porterhouses) cooking them done( not a fan of underdone hog)along with oven roasted taters, broccoli and some chunky apple sauce.would have been a lot of work, and I'd of ended up with half a handful of shredded pork I don't need.
