so I recently acquired a pretty decent smoker, and have been trying my hand at basic porkchops/ribs. which have turned out well. anyway, a friend and I are saving up to try something more exotic, but the prices are so crazy we can only really get one thing. was thinking of Kudu or some other really Gamey, dark meat.

what would /ck/ order? what exotic meats have you tasted?

gator and deer is out of the question too easy to get and weve both had that before. really was thinking about eastern diamondback, but I'd rather catch one then pay for it since they are indigenous.

rabbit is good but too expensive and so easy to raise same for guinea pig though ive never eaten GPs. I'd mail you a rabbit but I dont think thats legal.

well if you use strong flavours then all that's left of the exotic aspect is the texture, which you minced.
So in the end it doesn't seem any different from using 90-10 beef
