Why is food from louisiana so good? It can't be healthy for you.

I don't want to make a new thread just for this, and this is the perfect place to ask it, I think.

Is it ever acceptable to eat your shrimp etouffee or shrimp creole over dirty rice? I'm craving both, and want to make them tomorrow, but I'm wondering if the combination of shrimp etouffee and dirty rice will be too much.

There's really no wrong way to eat Cajun food, since it is of itself a product of putting conflicting things together.
I'd try creole rather than etouffee, but that's just me.
