Since no one ITT has mentioned the real reason we put rice in our burritos.
Because we like a lot of salsa and, sour cream, and messy beans. The rice absorbs the liquid so you don't have a runny falling apart burrito mess.

I like rice in my burrito.

I like lettuce in my gabacho burritos, but that's only because they're small enough to be eaten in one sitting. Putting lettuce in a mega burrito is a big no-no since it will be all gross when you re-heat it.
