These rolls are now being served in every asian restaurant across america. What's the deal with these. Are they authentic Japanese food? Can these still be considered sushi, or should they be called rolls?

Sushi, as the modern world now knows it, is quite an American food and "Japanese authenticity" doesn't mean shit

Any roll with rice on the outside is an American roll. Most complex rolls or rolls with avocado are American. More precisely, an American-Japanese fusion.
If you want to be a hipster faggot, not even any sushi with salmon should be considered authentic, as Salmon isn't native to Japan and is more of a recent thing and must be imported.

Honestly living in California I can say I have in fact had both bad sushi and bad rolls. I prefer rolls over traditional sushi excluding anything with squid or octopus. Having lived all over the place in Califonria I now know a few places that are honestly the best I have ever had. My favorite restaurant has one called a Volcano roll and it is a California roll w/salmon on top baked. If I have not been to a sushi restaurant I get the California roll first. I had heard the same "don't dip sushi/sashimi in soy sauce." Then, in "Jiro Dreams of Sushi", and the sushi chefs are tasting sashimi and dipping it in soy. WTF.

I usually hide the fact that I love rolls when at a sushi place with new people. When someone hints they like rolls I fire away though. I think my favorite is a tornado roll. I do love some of the crazy rolls they come up with, especially ones drenched in eel sauce. That being said I prefer simple nigiri, and i lightly dip that shit into my wasabi soy sauce paste. Anyone calling that shit wrong is an autist. Pre seasoned or it tastes even better with just a dab of wasabi soy sauce mix. I like eel a lot too. It has good flavor and eel sauce is nice and sweet and a good accent. I got to a local shop and get just eel and a bowl of rice with some tempura and I would take that as my last meal any day.

Chirashizushi made with eel, avocado and salmon is also good, easy on the eel sauce so it's a sweet bite between fresh tastes. Good stuff! I like a tiny bit of eel sauce drizzled on thin slices of rare steak too, cold on a salad.

We just call them Nori rolls at this point. I've made rolls at home with a variety of mundane cooked ingredients to convince people it's more about the fresh taste and texture of the rice than any one magical ingredient ( or to bust the dreaded 'raw fish is sushi' misconception). I like to see inventive rolls. No, I don't consider the dish authentic Japanese, more just an inspired fusion using a technique or ingredient, like many other borrowed and adapted dishes.

This is something my parents do and I can't stand it. They take the wasabi, mix it with soy sauce and make some saucy paste with a color that can only be described as baby shit.

I'm pretty sure it's one of the 'rules of sushi' that you don't do too.
