put 3 eggs in a saucepan on low heat, add a splash of milk. Stir. Keep stirring while eggs solidify. just before they are cooked how you like, take off the heat, add some salt, pepper and a sprinkle of cheese, stir for a little bit more until the cheese is melty, then eat on toast or bread.

Heat up some chorizo of your choice in pan on low-med heat for several minutes, stirring occasionally. Crack some eggs and whisk in a bowl on side just before chorizo is finished cooking. Stir in some chopped green onions and add in the eggs. Now stir the mix, on heat setting of your choice, until the eggs start to solidify. Once the eggs are almost ready grate some cotija cheese on top and mix it in. While the cheese melts, heat up some tortillas (of your choice). Once everything is ready, take off heat make some burritos, and spread a dallop of sour cream and some hot sauce/salsa on top of the filling before wrapping the burrito.

because the fire makes the metal hot, the metal holds onto the heat and releases it slowly, and the egg cooks more the more heat it absorbs from the pan.

if the egg gets too hot it overcooks. you are using the heat to shape the egg into small chunks of cooked egg. you move the pan on and off the heat according to how fast the egg is forming into chunks.

it's an art that you pick up with small experience.
