I like beetroot and salmon sandwiches. I will add them to any burger.

Add them to fruit smoothies. You can't even taste them. Save the juice to make colored eggs, which look beautiful on salads or as deviled eggs. Also, beets are nice on salads. You could also make a beet and goat cheese stack, they go really well together. Just cut rounds of goat cheese, and stack with the beets, sprinkling some chopped chives between layers, then set the layers on top of some tasty baby greens. Make a balsamic vinaigrette, and drizzle it over the stacks, then sprinkle with some chopped candied walnuts or pecans, or even just toasted walnuts or pecans (although the candied nuts taste better with it, :)
