Apple cider is dead easy. This batch I put 4.5 gallons in my 5 gallon glass carboy added 2 pounds of brown sugar and pitched a packet of Nottingham Ale yeast. You can use a plastic fermenter just as well. Waited a week until the SG was ~1.010 and bottled. After 2 weeks it was nicely carbonated and still a little sweet.
Easier by far than beer.15 minutes versus 6 hours.
