Does /ck/ 'sweat' their eggs? Personally, I like to have a little condensation on the egg. This means it has been out of the fridge for a bit, so the inside is slightly warmer and it will cook faster. Additionally, I believe the egg will cook more evenly.

Keep em in the pantry or on the counter. It really doesn't matter, but I just prefer it this way. If you're that worried about bacteria then wash them before you use them, and break them on a flat surface (so you don't push any shell inside the egg when you crack it (salmonella is only on the outside of eggs)).
