FOR FREE

GET THIS:
>2 lb ground beef
>1 lb bacon

MIX ALL THIS SHIT TOGETHER
>2 eggs
>1 cup ketchup
>1 cup raisins
>1/2 cup breadcrumbs
>1/2 cup chopped onions
>1/2 cup fresh sage chopped
>1 tbsp mustard
>1 tbsp soy sauce
>1 tsp Worcestershire

MIX THE BEEF INTO THAT SPECIAL SAUCE

GET SOME PARCHMENT PAPER
>lay out the bacon with the meat layer covering the fat layer of the slice next it

MOLD YOUR MEATLOAF ONTO THE CENTER OF THE BACON LAYOUT
>wrap the whole thing in bacon
>close the parchment paper tight

GET OUT SOME ALUMINUM FOIL
>wrap the parchment in the foil
>parchment opening facing down, foil opening facing up

INTO THE OVEN IT GOES

>30 minutes

TAKE IT OUT
>open up the foil
>remove parchment paper

PUT IT BACK IN
>500 F
>until it browns

First off, please don't cook it that long.

Restaurant proven best practices:

Wrap your loaf in plastic wrap, then aluminum foil. Cook at 400 for 45 mins, unwrap the loaf, bake 30 mins more, baste with sauce, then bake about 15 mins until the inside hits 160.

1 large egg per pound of meat.

bacon wrapped is always a good idea

if you must use oats, mix it twice as long to ensure it will hold together.

Don't use oats; DO use habanero jelly in the meat and as part of the topping (mix with ketchup). Use plenty of garlic (I do a clove and a half or even two per pound of meat) and pepper and cumin. Crackers or homemade breadcrumbs work.mushrooms make for pretty good additional filler.

I also add chopped jalapenos sometimes. Definitely serve with mashed potatoes and a green vegetable or boxed mac and cheese if you're feeling fat. I make meatloaf every week and it's different every time. Have fun with it!
