What kind of meat is best on nachos?

Up until recently I'd only considered ground beef. But then there's chorizo, Italian sausage, kielbasa, beef brisket, grilled ham, grilled chicken, even duck... there are some strong cases to be made.

What say you?

Hmmm....well it depends on what kind of mood I'm in.
Chile Verde (pork cooked in green sauce) is pretty damn good on nachos, but so is carne asada. Smoked brisket makes damn fine nachos, too. The only meat I really don't care for on nachos is chicken. It just gets lost with all those other toppings.

Yeah it can, like I said it just needs to be done properly. Most people that put chicken on nachos just add it as meaty/proteiny filler, and don't put any thought into how to flavor it so that it stands up with the other toppings.

Well, you can still put cheddar on the nachos, too. Just put some cheddar down first, then whatever other toppings you want, and then put the Rajas con Crema on top.

Another topping I've had that's really good (a little more traditional) is this sauce that one of my favorite mexican places puts on some of it's nachos and other dishes Basically, you take some refried beans (either homemade or even canned will work) and heat them up with some red sauce or green sauce and a little meat broth and puree it all to make a pourable (but thick) sauce. I love that on nachos, it's better than plain beans, IMO.
