How could people not notice the difference, assuming we are comparing your run of the mill quality tilapia to similar quality snapper and not high quality tilapia to subpar snapper.

The problem really isn't with the tilapia, it's the quality of the fish because of how it is raised. People want their fish to be cheap, so that means costs in terms of feed quality, stock density and time available to go from juvenile to market size needs to be cut down. And honestly, once the public perception is that it's a low quality fish becomes common, the market for good quality tilapia will shrink as your everyday consumer will not understand why this tilapia brand is more expensive than the other because "both are the same"
