Most sausages either aren't so blatantly mucosal or hide their intestinal origin with a nice dark sear

I'm sure it tastes nice, it just seems to try really hard to come off as unappealing

You don't eat the casing, you scoop out the inside. Its usually well-spiced and I personally find it delicious. Oats and organ meat being some of my favorite foods.

You should try it OP, though "proper" haggis (with lungs, pluck, etc.) is hard to find due to restrictions on eating heart and lungs in the US (i think)

The heart is not a problem in the US, you can legally buy heart no problem. However there is a Federal law prohibiting lungs from entering the food supply, so the lungs would be an issue unless you slaughtered the sheep yourself.

There's often "highland games" events that are held yearly in the us (definitely in CA, NC, and NH, but likely elsewhere too) and you can usually find vendors selling it (minus lungs as others have said) gives you a pretty good idea, and you get to watch people throw telephone poles and shit

I'd still eat it since pretty much the only thing I hate is raw onions and I love meat. I'd eat the hell out of a haggis with mashed potatoes. I always feel like it would just taste like a meatloaf, but more interesting.

It's really a conspiracy started by the Scots themselves to prevent the extinction of the wild haggis. The poor things have enough of a struggle in the harsh Scottish environment without being hunted to death by Americans and Chinks and Borneo cannibals.
