hey /ck/ just stopping by for a quick question:

i went grocery shopping, bought a steak in a little pack among other things, got home and got an emergency call and had to leave, you know, right at the fucking moment so i didnt put my groceries away. It's been roughly 7 hours since the incident. Is the steak safe to eat?

Dry aging raw meats is typically done between 1-4'C. It's a controlled fermentation and the evaporation of moisture, you want active enzymatic activity and minimal bacterial growth. It's not the same as curing, but has similar results. Just straight up leaving something out for 7 hours at room temp is much, much riskier. You can still eat it, but whether it's got nasty bacteria growing wild all over it is a big unknown and could send you to the shitter for 3 days.

Sorry OP, but the only sane advice is to toss it and cut your loss.

Unless you have the experience to judge for yourself (it should most likely smell off), you should really just toss it.

If you cook it thoroughly (to at least 165 degrees fahrenheit (about 73 degrees celsius) all the way though, it'll probably still be fine. If you wanna be absolutely safe, use a food thermometer after cooking to make sure the deepest parts inside reached the temperature as well.

After that, when storing, keep it cool (less than 41 deg. fahrenheit) or keep it hot (above 135 deg. fahrenheit). Everything in between's known as the "Temperature Danger Zone", and common health and safety guidelines say it's no longer safe to consume foods that have been in the danger zone for more than 4 hours.

Your steak won't be off. It won't taste any different
It will however have a fair bit of bacterial growth on it. This isn't really a problem if you cook it through or braise it.
Eating it as a steak served at anything under well done/med-well could send you to the shitter depending on how strong your immune system is.

My advice is just turn it into a curry or something and just boil it for a couple of hours.
