imo, quinoa is only good in desserts. it's always shitty in savory dishes.

mix some pre-cooked quinoa into a pudding, crumble, or cake batter. pretty good.

Quinoa by itself is not great, it's just like any other grain. (yes, it's actually a seed for you fucking autists out there) What you have to do is flavour it somehow, like in a salad. Add some finely chopped peppers, tomatoes, red onion, and a lot of parsley and then cover it in a vinaigrette. I like quinoa but would never eat it plain.

I personally flavour it while I'm making it soft. So If i'm eating quinoa, I don't use dressing. Ive done: chilli, lemmob/garlic, coconut lime flavoured quinoa in salads with no dressing, the quinoa is the flavour

I use quinoa in a couple dishes that I otherwise use bulgur wheat or couscous for. Both involve cooking the quinoa separately then mixing it with everything else when it's cooled a bit.

One is a grain- and veggie-heavy quasi tabbouleh salad (an authentic tabbouleh would have more parsley, and adding heathen vegetables like chopped carrots would get your head cut off in some corners of the world). Just add some nice olive oil, lemon juice, parsley, mint, salt, pepper, and whatever vegetables you have that are good (chopped tomatoes, cucumbers, carrots, peppers; onion & garlic if they suit you).

The is derived from a simple couscous/artichoke heart/walnut dish: some chopped marinated artichokes, fresh dill/mint/parsley (I go heavy on the dill, skip parsley, it just depends on what you like), freshly toasted walnuts, olive oil & maybe a little of the marinated artichoke liquid. Add chopped scallions and minced garlic if you like em. Season to taste.

I get these packets of quinoa that come with their own blend of seasoning and then I just chiffonade some kale with maybe a little soy sauce and garlic powder sprinkled on and toss it in after it's cooled off a little so it just lightly wilts. So good.
