You need atleast 3 eggs for just the sauce which is quite a few eggs for a dish that requires more eggs after and even then its barely enough liquid for the blender. After its made its way more sauce than you need for a personal serving and it doesn't keep at all.

The issue OP is stating about the hollandaise isn't the effort, but the fact that the sauce even made with a single 1 egg, but makes about 1 cup from that single egg yolk.

and MPW approves of knorr stock pots, that doesnt mean its what they use in their restaurants and that you dont get much better results cooking the eggs over an open flame or double boiler then adding the clarified butter than butting raw eggs in a blender and adding melted butter

not to mention the recipe doesnt even have a vinegar reduction and adds the lemon juice with the eggs instead of at the end
