So I've been hanging out with this vegetarian chick lately, and want to make her dinner. What is a cool veggie friendly dishes?

No dairy and no meat is the only real rules I think.

Salads go well with the veggie types. A tofu dish. Miso soup perhaps( don't use fish stock though). Can try to make a black bean veggie burger perhaps. End the night with a perfect serving of Jello.

Eggplant Lasagna

Pic related. However, I have not found a way to avoid the ungodly amount of liquid it releases (from the eggplant...even after salting and baking it to soften and the ricotta...also after draining in a cheese cloth) other than moving it to another baking dish and baking it again.

Do some pasta and tomato sauce. Finely chop up an onion or two and a couple cloves of garlic. Sauté the onions (I'd usually add bacon shortly afterwards but obviously not for vegetarians), once they're getting there add the garlic, then put in a tin of chopped tomatoes and some passata (it can be one or the other if necessary but a mix has the best consistency). Add herbs, salt and pepper, crushed chilis, and some sugar, then just heat for a while and then add to pasta of your choice.

Nice simple tasty meal. If you're feeling adventurous and want to impress her you could always try making the pasta yourself.
