I thought Shark-fin soup was falling out of favor because its practically tasteless as well as inhumane, which is why there is a singular stance on it (its cruel!) while foie gras is split down the omnivore/vegetarian lines.

Shark-fin soup was popular because of the TEXTURE, which is something that people in the west tend to forget about. The Chinese love that chewy tendon-like texture. That's the whole point behind shark fin soup--not the flavor--the TEXTURE of the "fibers" in the fins is the point of the dish. Same reason why the Chinese pay serious money for swallow's nest and bear paw as well--those are other foods which have that same kind of texture.

It's falling out of favor for three reasons:
1) It's expensive, and there is a lot of public pressure for the government to stop spending that kind of money when politicians go out to eat. (because it's so costly about the only time it is eaten is for major celebrations/banquets/weddings and fancy political/business dinners)

2) The younger generation is picking up an interest in foreign foods and are becoming less traditional, so there's a lower demand among the newer generations

3) There's a growing backlash against it from an animal rights & cruelty perspective.

so yeah, it is on the way out, but anyone saying "it's flavorless" is missing the point. Yeah, they know the flavor isn't anything incredible. That's not the point. The TEXTURE is.
