Agreed. You can take ghee to high temprature without it tasting like burnt asshole. It helps to to lock in the eggs juices. Just make sure you leave the eggs out for 20 minutes to come to room temperature or they will cook unevenly.

what's a ''safe'' oil to use for cooking chicken breast, eggs and steak? that's basically all I eat that needs frying, I just want the least potentially health damaging oil, if there is such a thing...

EVOO contains a lot of juices from the olives. This makes it very flavorful. That also gives it a low smoke point because those juices burn at a very low temperature. When you heat up EVOO enough to cook with it you are burning those juices. That makes the food taste bad, can put potentially dangerous chemicals in your food, and it also wastes the very thing that makes EVOO so expensive.

Use EVOO for things that require LOW heat, or no heat at all, like dressings or marinades.

If you want an oil to cook chicken, eggs, or steak, there's many choices. Ordinary olive oil is a good choice. So is anything with a fairly high smoke point. Just google "smoke point of cooking oils" and choose one that's around 400F or higher.

I don't really care for the taste, but that's my opinion. Yours may vary. It has a very high smoke point, which is good. On the other hand, it's also very expensive.

I use ordinary (aka "light" or refined) olive oil for general purpose use. If I need to cook something on very high heat (like searing a steak) I use peanut oil.

If it's cooked to anything over 100 degrees, it becomes really unhealthy to ingest

if you want to work with a healthier oil, use grapeseed oil!!

You can fry eggs in extra vurgin olive oil, you faggots. Eggs fry very quickly, and you can use a very low temperature for them. Yes, the olive oil will begin to degrade, but it won't have nearly enough time or enough heat to make a big difference. And the olive oil gives a nice flavor for a change of pace from frying in butter. Goes great with a chiffonade of basil on top.
