I always use high quality oil, and I try and vary the amount of mustard I use to change the flavor of each batch.

i just prefer their use of vinegar in their mayo. If I get a recipe for how kewpie makes their mayo, I'm definitely gonna try and copy it because I do prefer making things from scratch over buying things premade.
