Do you leave your butter out?

My roommate was bitching today about his concerns that I never put my butter dish in the fridge.
I keep the sticks that I'm not using in the fridge, but once I put one in the butter dish, it stays on the kitchen counter.

Is this bad, or is he just being paranoid and nosey?

Butter is absolutely fine to be left out unless it's so hot it's going to melt into a puddle. The cover is pretty much just there to keep flies/dirt off it.

I put mine into the fridge at night because I don't use much butter and it extends it even more.

I often go a week at a time without using any butter at all. A package of butter sometimes lasts longer than the expiration date. If a butter crock/butter bell can help make it last longer while keeping it out and ready to spread, then it will pay for itself over time.

And there are less expensive versions available.

Since butter is almost pure fat, it doesn't spoil as quickly as milk. You can leave butter out for a while before it spoils. Just leave enough out so that you'll use it all within a week or so if you're that worried.

Also, ghee can last for months without being refrigerated.

It's okay for a week, if tightly sealed and salted. A little less than a week if unsalted, depending on your heat/humidity. If it's a higher fat butter (most of mine is) it just becomes too liquidy at room temperature. I don't have a butterbell, just a covered stick container.

If you simply must have spreadable butter on demand, what I do is have two butters, the stick in the fridge, and the "whipped" butter that comes in a plastic or waxed container. I can chip off or scrape off curls of that which melts instantly on toast. It tastes sweeter/fresher than sticks too, imho.
