Hey /ck/ I've been looking for a good refried bean recipe that doesn't include lard. I have a crock pot or a dutch oven i can use. also I'd really like a good mexican rice recipe. basically, whats your go to hispanic dish?

Yeah, but I can't imagine it would taste good. Just use bacon fat, or if you absolutely cannot because you don't want them to taste good, use something flavor neutral like peanut or canola.

Anyway, it's pretty simple to cook them.

1. Get a large pot of water lightly boiling, and add a couple of dried, seeded ancho, arbol, and guajuillo chiles in there, and add the rinsed beans, and boil until the beans turn soft.
2. Fish out the chiles and garlic, and drain the beans.
3. Sweat some chopped onion and jalapeno on medium high heat in a large, heavy pan with your fat of choice, then a couple of cloves of minced garlic.
4. Add the means, and mash up, salting well, and season with chile powder, and cumin, and some hot sauce if you wish. Add water if you like them thinner.

Here's my recipe for spanish rice:

1. Heat a tablespoon of olive oil per cup of rice you plan to cook (not extra virgin) over medium high heat in a saucepan big enough to boil the rice in.
2. Add the rice in, and cook until just starting to toast. For 2 cups of rice, I use 1 large, roughly chopped onion, and 3 cloves minced garlic, and just mix it into the rice. Season with a little cumin.
3. Add a can of peeled tomatoes, with the juice set aside, to the pot, and stir, breaking the tomatoes up. Once the vegetables have all had their raw edge taken off, and got just a bit of color, add the tomato water, and chicken stock, enough combined to make 3 cups of liquid.
4. Lower the heat to a simmer, and stir frequently, until the rice is mostly cooked, then add liquid or reduce as necessary. When it's to your preferred consistency, turn off the heat, salt to taste.

The one reason I can think of that you didn't list is that maybe he wants to use a lot of fat. I think that refried beans are best with lard, but if someone uses too much lard, the results can be pretty bad.

Perhaps he tried cooking them before and used too much lard and now thinks that lard makes them taste bad.

OK I have not ever shared this protip, but here goes.
Stir in a little melting cheese. It gives beans a silky quality. It is a common thing I see all the women in my family doing. ( Mexican in Mexico by the way )
Also, we reheat them over and over again, and as they get dry and too thick, my mother in law reconstitues them with a splash of whole milk. Dat creamy goodness.

American here. I rinse the pintos and boil them with an onion, jalapeno, garlic clove or two and salt. Cook until tender...this makes them sort of all purpose beans. If you want refried, which you do, heat up some fat...lard or bacon preferred... addd some slice onion and arbols, maybe cumin. Stir a bit until fragrant, Sift out or not. Add the cooked beans and a little water. Careful of the splatter from the oil....mash the beans and stir. Mash a bit, stir a bit, repeat until familiar. Season to taste and serve.
