Well, it sounds like he just an inconsistent cook. That's one of the things I think a lot of people fuck up when they cook, they don't realize the importance of consistency in their cooking.

It could also be that he changes the recipe somehow. I know a few people who go a good job cooking if they simply follow a recipe but the moment they ideas in their head and start experimenting with their own (bad) personal touches then they fuck up bigtime.

I do that all the time.
It's because I research recipes and make something and it comes out good, then the next time i'm like 'nah i don't need to look at any recipes to remember' and then fuck something up.
