it's a tenderloin... if you knew anything about steak you'd know tenderloins are very tender but not very flavorful because they're very lean.

making them with sauce infuses them with flavor they lack while keeping them tender.

Well, the butt is the butt, and the shoulder is the shoulder. You know it comes from an animal, right?

Pork Butt is the top part of the shoulder... not the ass end of the beast. (confusing I know...)

Think of it like the equivalent to chuck on a cow.

The shoulder is actually further down on the pig, but in the same area as the butt. It's about the same area as the brisket would be on a cow.

Unlike brisket/chuck however, shoulder/butt on a pig are pretty interchangeable.
