Pedernales River Chili Recipe:

Recipe Type: Beef, Soup/Stew, Chili
Yields: 12 servings
Prep time: 20 min
Cook time: 1 hr


Ingredients:

4 pounds coarsely ground beef (chili-grind)
1 large chopped onion
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
6 teaspoons chili powder
2 (16-ounce) cans whole tomatoes, cut up
2 to 6 dashes hot sauce, or to taste
Salt to taste
2 cups hot water


Preparation:

In a large frying pan, brown meat with onion and garlic until meat is lightly browned; transfer ingredients to a large heavy kettle or cast-iron Dutch oven.
Add oregano, cumin, chili powder, tomatoes, hot sauce, salt, and hot water. Bring just to a boil; lower heat and simmer, covered, for approximately 1 hour.
Remove from heat. Skim off grease and serve.

Here's what I've said in summary:

-add the pureed chili mixture and simmer.

Chili with no beans isn't the dominant style. Have you never been to a chili cook-off? I grew up in Arkansas, near texas, and people didn't bitch this much at chili competitions. I'm glad it's more diverse now. I love things like turkey chili with chipotle chilies and white beans, and turkey stock. I love chili that has no meat at all - like a 15 bean chili with as many varieties of chlies as you can find. What's also really good is pork shoulder chili with cooked jalepenos, bell peppers, serranos, hatch chilies, and any other green chlies.

I'm not the guy you're replying to, but I very very rarely eat out. For me it's for several reasons:

1) Good quality restaurant food is expensive, which I cannot afford, and even if I could I think it's a poor use of money.

2) Chains and fast food I can afford, but seriously, who wants to eat that crap?

3) Cooking for myself is much cheaper than even eating fast food.

I don't grow my own produce, but I do cook from scratch. Better and cheaper than eating out.
