My grandma who grew up in the depression goes on about wonderful carp she ate as a child and its really good.
I live next to the Mississippi river in MN, and I would need to go far up it to want to feel safe to eat it - but most likely not at all. All the farm fertilizer and iron range mercury is right at the head of the river. Anything below MN shouldn't even consider fishing it.
However, the large Mung community catches the and eats them a lot. So do Cambodians. They're all pretty cool. A lot better than the Somalian refugees they shoved up in St. Cloud. They only came because they had no home, not because they want to be here, so they are generally not nice or recluse. The older ones are mellow though.

Anyways, I mainly go for Pike/Bass. No boat, so no walleye.

They are really good to eat, but they are a fish that has for some reason been vilified in most of American culture. I'm a professional fisherman and holy shit carp suck. They are essentially giant goldfish, and it shows. They're disgusting bottom-feeders, put up a shitty fight on the line, and taste like cock compared to everything else in the lake.

My dad makes a glorious smoked carp.
Basically you filet a carp and soak the meat in a simple brine for a few hours to a day, then you prepare your smoker with coals and soaked Hickory wood chips (he might add a few other types of wood not sure)

It turns out tasting really good, like a combination of fish and ham. Great food for drunks

Good, your carp is probably edible, might still taste a little muddy from its diet, if the substrate of the river system is soft silt rather than hard-rock/pebbles. However, if you're inclined to try, there shouldn't be too much of a problem.
