First attempt at eggplant parmesan. What do you think?

Needs more marinara sauce, and good quality mozzarella too. Id also suggest not breading the eggplant and just frying/grilling it with olive oil. The dish is rich enough as is.

Remember to salt your eggplant to draw out moisture before you cook the slices. Otherwise the slices are cut at the perfect thickness. Enjoy one of the best vegetarian recipes ever invented.

Not OP but I like the skin on.

OP, I am going to say from the sog factor, those eggplants look quite firm still and therefore undercooked. I would definitely give that casserole time in the oven to do more than melt cheese, but to finish the cooking of those eggplants.

When I make eggplant parmiagiana, I like some residual crispiness, so I sauce eggplant at the plate. I cook the eggplant and broil the cheese on a cookie sheet all individually. Alternately, I slice lengthwise and treat it like a lasagna.
