Most of my kitchenware is mid-grade, but I want my knifes to be high quality.
What brands should I be looking at?

I'm not a chef, I just cook as a hobby.

Anon use what you can afford, and what fits you comfortably.
Buy a few whetstones and hones. Learn to use them. You will not regret that.
You will save money and have a knife that holds a razors edge.

I have Fiskars functional form knives. They weren't that expensive, and are all I need.

Ok, I'm not really into $1000 knives, but that honyaki wagyuto is a really nice looking knife. I'd have to buy a bunch of fancy jnats to justify owning it though, it would be a shame to use shapton or king or whatever.

A knife isn't really something someone can clear-cut tell you to buy. How much heft do you want, do you want something that retains an edge well or something that can sharpen better.
What do you spend most of your time cutting; hardy veggies and bone in meats, or boneless and tender veg.

A lot of knives for a lot of people, know what you want and look it up from there
