TTT: Drying steaks and chuck roast into jerky

i have some old steaks from 2010 that were vacuumed packed and a chuck roast from 2012.

My theory is they will dry into jerky if i
A.) defrost and slice the roast into thin pieces then cover it with salt
B.) defrost the steaks, trim, cut, and flatten in to thin pieces and cover it with salt.
