So I was a vegetarian but got diagnosed with migraines which restricted my diet a lot (no beans, mushrooms, avocado, onions, tomatoes, etc.) so I'm back to eating meat. What's the best way to pan-fry a chicken filet? I don't want it to be bland..

When I looked up tyramine it said mostly fermented foods. Weird.
But I just get the chicken to room temp, throw some butter in a pan, and fry the thing up with maybe some lemon pepper? Idk add whatever you think would taste good.

Saute a smashed garlic clove in a little olive oil. Remove garlic. Add pounded/butterflied/cutlets of chicken breast to infused oil. Brown 5 mins a side. Squeeze over lime, or lemon. Salt, pepper, maybe some paprika.

You use less than a tablespoon of flour, if you want to give it a little coating of seasoned flour before pan frying.

Spice blends to try: jamaican curry powder, chinese five spice powder, italian, poultry seasoning (watch for msg though), mrs dash has 4 nice variations of dehydrated veggie bits that don't add salt or chemicals, herbes du provence, summer savory, cajun, blackened seasoning.

As you can see ^, you can have quite a few different flavors without any of your triggers. You can do wet things like thai chili paste, garlic-chili paste, asian ginger dressing, harissa, za'atar, too. Vary your oil, from butter to olive to walnut to green tea.

I like to pan sauce whatever I brown, most nights. I might pour in my morning coffee leftovers, some OJ, some milk...wine, fortified spirits, beer and vinegar might be migraine triggers though, so test that. In general, I'm sure you'll feel better eating a diet more balanced now. My exhusband used to state he had a "protein headache" when not getting enough. Might have been a real thing afterall. He did feel better when he didn't do vegan meals more than twice in a row.

I eat meat, but that's a list of everything I like. pound it flat, salt and black,pepper,saute quick in butter or oil. add little beer, wine or some kind of stock and flour or starch to make a sauce. or alone with some balsamic vinegar gonna be kinda bland.

Sometimes chicken breasts are kind of huge, and by the time you cook the thickest part through, the thinnest parts are terribly overcooked.

If I picked up a package of breasts that are ~1lb a piece, I'll cut them in two horizontally, and if one piece is of uneven thickness, I'll wrap it in plastic and pound it flatter.

Once they're the right thickness to cook fast, I'll season or marinate however I want and cook them fast and hot (ie, medium high) until the thickest part of the meat hits 165F.

But cooked over charcoal on the grill.

I feel your pain, OP. I get migraines if I eat too much of hard cheese, mushrooms, or tomatoes.

Thing is though, you can usually get away with eating a few of them.

Anyway, in regards to chicken fillets, I'd advise you bake them instead. I find they taste much better that way. Pan-fry things like thighs.
