What are the best wings you've ever had?

Recipes greatly appreciated for others to try and make them.

>> No.5326063

Was actually going to make a wing thread but figured I'd ask this here.

Having a party with 10-12 people Saturday. Was gonna' make some hot wings. 2 questions

>How many wings should I buy? I'm looking at 2.5 lbs right now

>Best Hot wing sauce?

>> No.5326088

I usually just combine honey and soy sauce.
Soak wings overnight then bake under foil.
Remove foil and bake crispy.

>> No.5326110

Not the BEST, but the absolute hottest - they have many fire levels, and i asked for the hottest and they were inedible...
But for flavor, I like Frank's and butter - traditionalist...

I can't taste strong things really, my nose is broken or something.
But my favorite wings, I take 6 full wings (12 pieces + the extra bit) and wash them off of course, pat them dry of water, then put them in a bowl.
Olive oil them up, greasy, salmonella hands.
pour in the seasonings you had prepared before in a bowl. salt, paprika, whatever.

Bake for 25 minutes at 400ºF
You can hold the Alt key and press 1, 6, 7 on the right keypad to get a º
Take them out, flip, bake another 25.
Once crispy, I remove and turn off the oven. Then I put them in another bowl where I handle with tongs to get them coated with hot sauce. Put them in the cooling oven until the sauce dries completely, take them out, coat again, put them back in.

eat whenever you're done being drunk.

I would go with five pounds, just to be safe.

If you're a traditionalist, go with the classic frank's red hot and butter. If you're a hipster, do a similar sauce, but with sriracha. If you have good taste, make your own sweet and spicy bbq sauce.

The biggest conspiracy ever formulated was that of wing restaurants selling single flats or single drums as an entire wing.

>order 10 wings
>mfw they give me the equivalent of five wings and don't even include the end pieces

>> No.5326476

first of all, 5 lbs is not enough
more like 10
and honestly probably still not enough
ive never in my life seen leftover wings if they're good
second of all, wings are beyond easy
but EVERYONE fucks them up
1. cut your fucking wings
hopefully it amazes you that there are people out there that DONT cut their wings
2. deep fry that shit
not all the way through though
3. lather on your sauces
actually less lather, make your wings take a bath in it
you better have multiple sauces too. usually i go with a spicy bbq and a buffalo but literally do whatever. a lot of people don't like really hot buffalo but the people who do only like it that way, so if you do buffalo at all keep it fucking hot and make a whole other batch of something else. sometimes i just pick out salad dressings to use as a base and add spices
4. grilll it
i'm not going to give you a crash course on grilling because that's a whole thing, but if its bbq or anything else with a little sugar in it, try and make it almost candied

anyways best wings ive ever had were a homemade sweet&hot onion bourbon bbq mess
fry onions in bacon (and bourbon), almost carmalize really
throw in your ketchup/worchestershire sauce/vinegar/hotsauce/spices/honey or brown sugar/ bourbon
let that shit simmer for like, half a day
let it cool
ive considered using finely diced mushrooms too but people i hang out with don't like them so whatever

yeah, i have two big ones for occasions like that but you should be able to semi layer em and just move em around a bit.

they dont take very long to cook so if you are going to fry them after its easy to do in batches. the only thing about eating them just smoked is the skin isnt near as crispy as it is if you fry it after

i like the barrel smokers since the smoke is the only things that heat the meat but ive never had an issue smoking on my webber since dad taught me years ago so i cant really justify the price

Do the right thing, Anon.

Nah, but seriously, great technique, I'm not OP or anything but I have found that wings need to be deep-fried then slathered with the sauce. The skin is crispy but then starts to get saturated with the thick sauce, so you end up with this texture that's at once messy still puts up a little fight. Simply baking the wings in sauce would make them much too tender on the outside, in my view.

Best wings I've ever had were the ones I made. No breading, fried twice once at around 225f to no hotter than 250f then once again at 375f-400f.

OH SWEET ZEUS THESE ARE THE BEST WING EVER

motherfucking chef john's buffalo sauce recipe:
https://www.youtube.com/watch?v=SN3j0U8WqiA

this vid does not show the wing prep:

1. coat wings with oil in bowl and mix them till lightly overed

2. place in plastic bag and put in seasoning and flour and mix until coated

3. place on baking sheets and drizzle light coat of oil over them then cook 1/2 hour per side about 350F

they will be crunchy on the outside but literally fall off the bone due to the moistness inside. throw in bowl and mix in buffalo sauce!
