Low carbohydrate versions of everything, and when people who did not know anything about nutrition would use "carb" as a buzzword while shoveling bacon and butter into their mouths, then complain about not losing weight.

Just the word "carb" in general, fucking retarded.

Agreed on the gourmet-burger thing. I went to this restaurant in Los Angeles as a spontaneous decision with some friends, because they figured that hamburgers = cheap, and I warned them otherwise.

We ended up paying something like 30 dollars for each meal, for hamburgers.

I'd convert to religion if that died tomorrow. It's this generation's MSG, except instead of the evil "ching-chongs" it's the big bad farming companies with their "GMO's". It's because a little truffle flavor is a lovely thing. Lots of poor truffle flavor spilled all over everything to "class it up" is not just a cheap trick, but it gets tiresome very quickly.

I would not draw a parallel with vanilla. Instead I'd compare it to making a dish seem "richer" by covering it in flying fish roe, and calling it caviar. (And I'm glad the flying fish roe trend came and went as well).

I have celiac, have had it for a good while before this whole gluten free trend came along. I'm of two minds about it. Ten years ago, it was nearly impossible to find quality gluten free products. Then the Atkins diet came along and people were less weirded out by someone asking for a burger wrapped in lettuce (although I did get a lot of people telling me I didn't need to lose weight). And a few years back the gluten free fad caused a proliferation in quality gluten free products. Can go into any grocery store now and find a decent selection, when I used to have to travel ~45 minutes to buy anything other than the basics. Haven't seen prices rise, really, but they've always been high. And the type of places that offer gluten free for the hippies tend to be more expensive in the first place.
That being said, the sheer idiocy of the gluten free trend for non-celiacs has made me not want to eat gluten free, especially while going out. I've heard and seen people be absolute morons when it comes to ordering at restaurants, so much so that I don't want to be associated with it. I'd almost be willing to go back to the bad old days of limited selection and blissful ignorance of the general public.

This. Gluten free bread uses egg or some other kind of chemical emulsifier to give the bread structure, but it never has the right texture.

Actually, it's far easier to make low-carb bread than gluten-free bread, since the gluten content of wheat contributes much more to the formation of bread than anything else, and you can get vital wheat gluten fairly cheaply. You could also use it to make seitan as a meat substitute.

These people are so full of themselves that to them, the only right way is buying expensive and/or trendy, buzzword-laden ingredients (like that pb&j chick acting all high and mighty since her peanut butter is 'all natural', a phrase that in reality means fuck all. https://www.youtube.com/watch?v=AftZshnP8fs)) and turning basic, everyday dishes enjoyed by both the lower and upper class into forced artesan clusterfucks. Most likely to them, people who use more common or cheaper ingredients or eg. don't grind their own oats are just dumb white trash so who cares LOL.

I have nothing against experimentation or aiming towards perfection, but I do disagree on the level of high ground these people have given to themselves, especially when most of the time their "correctly done" end results either miss the original point of the dish or look just awful. People can by all means grind their own oats and be as quirky and original with their versions of hamburger or mac & cheese, but I will continue to draw entertainment from those who think this gives them any sort of special authority on how things are ought to be done.

Yogurt is way too healthy to be labled as a "Food trend."

I don't fuck with FroYo and shit, but try eating plain greek yogurt with a spicy dish or hot soup on the side. Or mixing it with tostitos dipping, like the spinach one for example. Very good complement for intense flavors as a way of cooling out your taste buds.

I make my own Greek Yogurt, tastes great when you drain out the water. Must have with fried foods, helps with the oils.
