I used a garlic press until I realized garlic could be crushed under the broad side of a knife.

This simple, ubiquitous technique somehow evaded me for years.

I don't know why I'd go back to a garlic press. I don't notice any difference in taste.

Conversely, I don't get the garlic press crowd. My knife is already there, ready for business. With even novice level knife work, the rate limiting step is peeling (which is usually faster with a knife anyway ). From there you get to control mince size and you don't generate any more dishes.

Presses are a nonessential item and I've never been so dissuaded by chopping a few cloves that I felt the need for a new tool

I've always known there were different ways to process garlic. Not because of television (we sort of had one growing up but no one actually watched it). Because we had all the relevant tools - chef knives, garlic presses, food processors - and we naturally tried them all, as intelligent children do.

Be glad you got a decent one. Now I'm not going to go into about how crappy some of them are, that's irrelevant to the point I'm making but yeah, good ones work fine.

However you can process garlic to around the same level nearly as fast by hand with a sharp knife. And if you need actually crushed garlic you still have to use a knife, or a pestle and mortar after you've run it through the garlic press.

I nearly never want garlic with that much texture anyway, prefer it much finer than that (just a pulp in fact) 99% of the time, or want it in slivers. So a garlic press is just not a good buy for me. They're also frustrating as a 'labour saving' device because of how difficult they can be to clean properly.

I don't think they save any labor at all. I can just smack the glove of garlic with the side of my knife. If it needs to be in large pieces, give it a gentle whack. If you want it fine, smack it harder. It's done in less time than it takes to go get the garlic press, let alone clean it.
