Tobasco is a light hot sauce used to ENHANCE flavor, not drown it.

Rooster sauce is good for drowning nasty $1 chinese food in it. It's not good. It's too thick. It has too distinct of a flavor.

I can put tobasco on eggs, noodles, meat, chicken, even fucking pancakes and it will just enhance the flavor.

Tabasco actually has the much stronger flavor, you just use less of it. Due to the aging of Tabasco in oak barrels it has a VERY fruity, tobacco-y profile, almost perfumey. In exactly the right dish it's incredible but it's hardly universal, Frank's is universal because it's more like plain vinegar and heat. Sriracha has a more universal quality than Tabasco because it isn't nearly as fruity or distinct. On smoked pork ribs sriracha is so beautiful it can bring tears to your eyes.

I generally agree although I have found one excellent use for Sriracha: mixed into ramen soups. Somehow the flavor combines with the broth perfectly to create something new, rather than just making the soup taste like Sriracha.

Tabasco is a cooking hot sauce. Not a table sauce. It's the hot sauce you use for seasoning soups, stews, cajun and creole dishes, anything that benefits from a vinegary heat.
Sriracha is best with asiatic dishes.
Lousiana Gold is my favorite table sauce all around.
Lousiana is my favorite for hot wings and other American glazes/sauces
Valentina is my go-to for mexican food and adding to salsas
El Yucateco and Tapatio are my table sauces for mexican food.

Well my problem is that I don't eat a lot of Asian foods. Chinese take-out, or teriyaki from the Sarku Japan at the mall, or pho from the local Vietnamese place, sure. Heck I tried a Tibetan place for the first time last week. But by and large it's just not a big part of what I eat so Sriracha has limited use for me.

Tabasco, though, heck, I can mix that into my tomato sauce, chili, soup, stew, put it on my pizza, scrambled eggs, mix it with mayo to create a great condiment. Very versatile. I just wish it came in bigger bottles than what you can usually find in the store.
