does oranges turn bitter when heated/fried/baked?
i've tried twice to do something with orange juice and oranges for my fried rice, both time quite unsuccessful. once in the rice cooker, and once in the fryingpan. id there some chemistry magic at work here?
otherwise, post you favorite things to do with leftover rice/fried rice

Cooking does not turn oranges bitter, but that being said the white part of the peel is very bitter. Are you using the whole peel? If you are, stop. You can use the zest, juice, and fleshy segments just fine, but not the white part of the peel.

i usually eat the white stuff of the oranges. in my cooking i've just used clean fillets.

Yea orange juice is shit when its cooked. Now, as a dressing ingrediant for salads, thats a different story.
