I put Oriental flavor ramen noodles on a day old slice of plain cheese pizza yesterday, it was really good. The noodles moistened it up nicely, plus the velveeta and sausage I had in the noodles worked very nicely with the pizza. Improvisation is the best way to get rid of leftovers and the results taste pretty damn good.

In a similar vein, I've recently been making "homemade pizzas" ( I've been buying the crust for convenience, so not wholly homemade) and I've found it difficult to get the browning I want on the cheese before the pizza's overdone.

The first time, I assumed it was because I oversauced the pizza, but I was much more sparing with the next one, and I faced the same issue.

My two thoughts: should I try swapping to broil for a few minutes at the end of baking, or is it the composition of my pizza?

TO better your answers, I've been using shredded chicken, alfredo sauce, wilted spinach, and roast garlic in the pizza, with some spices (mostly red pepper flakes, salt and pepper) under pepperjack cheese.

OP here, in my experience the melting and browning of the cheese depends not only on the cheese itself, but also it's moistness.
Sometimes when I used store-bought shredded cheese, which is rather dry, the cheese would get hard and brown instead of just melting at some points. I have never used pepperjack, so I have no idea how much moisture it contains.
