so me and an ex muslim friend are going to make our first backon meal.

what should we make?

Elsässer Flammkuchen ("Alsatian flame cake")

Basicall just a super thin pizza dough with a thin layer of sour cream and on top of that julienned, blanched onions and bacon, diced or cut into thin strips. put into preheated oven until dough is crispy and bacon lightly browned, at 200°C

It doesn't get any more trefe than that, pork on top of a dairy product. Super simple to make and very tasty.

on the other hand, try some thick cut marinated in balsamic vinegar and brown sugar, then baked on a wire rack, with a little water or beer (beer is good, since you can then use the drippings for other stuff, like dressing) in the pan to keep the drippings from scorching, at 200 for as long as it takes to get crisp

1 small frying chicken cut up, tosed in seasoned flour
1/2 lb of bacon cut up and put on bottom of a large frypan

put chicken over it and cook uncovered on low heat for about 45 minutes turning occasioanlly

Just checked that recipe, it seems pretty easy, I've only made my own dough a few times but I reckon I'll have a go for this. Some of the pictures on that page look pretty terrible, though! Don't get me wrong a lot of them look fabulous but a few of them look like they haven't cooked the toppings properly so to that end would you recommend browning the onion and bacon in a pan beforehand to get a bit of colour and caramelisation going?

that's up to you I guess. I blanched the onions a bit before baking and left the ham/bacon as it is was and it was good. Btw a lot of commenters below the recipe advise to bake it in the highest possible setting (like 250°C) but for just a few mintes instead of 20 min at 200°C.
Tip: spread the sourcream/creme fraiche pretty thin, more doesn't work here, it makes everything a bit soggy.

Ah, okey-dokey. So I'm thinking maybe fry off the onions to get some colour--maybe even cook 'em down with a little balsamic and sugar to get that onion marmaladey effect?!? Or do you think that wouldn't work with the dish and the onions'd dry out too much in the oven? I wont fry the bacon/ham off, then, roasted bacon is fucking lovely, that texture it gives to the rind?!? Whoa! Also which do you prefer as a topping, sour cream or creme fraiche? I prefer the former to the latter so I'd be inclined to go for that but if you think it's better with creme fraiche then I'll use it for this.

When I tried both I preferred sour cream, but that may have had to do with the fact that the creme fraiche one was the one with the too-thick layer.

You can make the cakes as small as you want, like palm-of-your-hand size, and try out everything you want to try all at once. They are so thin that a super small cake will not be done any sooner than a single one the size of a baking tray. I like the crust best, anyway.
