Tried the reverse sear method last night. Worked pretty well even though I don't have a meat thermometer and was kinda guessing.

Steak was NY strip, a little over 1" thick. 1 hour in the oven at 225 F, then 1-2 minutes per side in a very hot skillet (makes much smoke, be prepared) to develop the crust at the end. This way almost the entire steak is medium rare.
